Bean Soup

  • Mixed Bean Soup with Seasoning Packet
  • 2 14.5 Ounces Cans of Diced Tomatoes
  • 8 Cups of Water
  • 4 Cups of Broth
  • 2 Cups of Onions, Chopped
  • 2 Cloves of Garlic, Chopped
  • 8 Ounces Andouille Sausage, Chopped to Bite-size Pieces
  • 4 Ounces Tasso, Chopped to Bite-size Pieces
  • 1/2 Pound of Pre-Boiled Chicken, Chopped to Bite-size Pieces
  • 2 Bay Leaves

Drain and rinse beans. Soak beans for 4 hours or overnight. (Not necessary if cooked in a Crockpot for a day.) Follow the below directions if cooked on stove top; otherwise, all ingredients can be combined in a Crockpot at one time in the morning to be ready for dinner.

Place beans, seasoning packet, water and chicken broth in large pot. Cover and bring to a boil. Add tomatoes, onion, garlic, bay leaves, sausage, tasso and chicken. Cover and bring back to a boil. Reduce heat to a medium low and cook for an additional 1 1/2 hours.
