Bran Muffins

  • 1 Cup All-Purpose Flour
  • ½ Cup Sugar
  • 2½ Teaspoons Baking Powder
  • ½ Teaspoon Baking Soda
  • ½ Teaspoon Salt
  • 1¼ Cups 100% Bran
  • 1 Cup Milk
  • 1 Egg
  • ¼ Cup Vegetable Oil

Preheat oven to 400°. Combine first five ingredients. Set aside. Mix bran with milk until bran is moistened; let stand 5 minutes. Add egg and oil beating until blended; add flour mixture, stirring just until combined. Do not over-mix. Fill greased 2½ inch muffin pan cups 2/3 full; bake about 20 minutes.
